Fried Morning Glory

When it comes to quick and nutritious meals, this stir-fried spinach with garlic and chili is an absolute favorite. It's simple to make, full of flavor, and perfect for both lunch and dinner. The spinach gets a wonderful taste from the garlic and chili, while the oyster sauce and soy sauce add a delicious umami flavor. This dish is not only healthy but also incredibly tasty and can easily be made with ingredients found in a typical supermarket.


  • 300 g fresh spinach leaves
  • 2-3 cloves of garlic, chopped
  • 2 red chilies, sliced (to taste)
  • 2 tablespoons vegetable oil (such as canola or sunflower oil)
  • 2 tablespoons oyster sauce
  • 1 tablespoon soy sauce
  • 1 teaspoon sugar
  • 1 tablespoon water
  • 100 g fresh bean sprouts (or another of the options mentioned above)


Prepare the ingredients:

  1. Rinse the spinach leaves and bean sprouts thoroughly and let them drain.
  2. Chop the garlic cloves and slice the chilies.

Prepare the sauce:

  1. Mix oyster sauce, soy sauce, sugar, and water in a small bowl. Stir until the sugar is dissolved.


  1. Heat the oil in a large frying pan or wok over high heat.
  2. Add the chopped garlic and chili and stir-fry quickly for about 30 seconds, until fragrant but not burnt.
  3. Add the spinach leaves and stir-fry for 1-2 minutes until they begin to wilt.
  4. Pour the sauce over the spinach and stir well to coat everything evenly.
  5. Add the bean sprouts and stir-fry for another minute until heated through but still crisp.


  1. Remove the pan from the heat and serve immediately as a side dish with rice or as part of a larger meal.
