Flavors of Cambodia: How to Make Chicken Lok Lak

While Beef Lok Lak is more commonly known, the chicken version is also popular and equally delicious. Chicken Lok Lak features marinated chicken pieces stir-fried and served with a tangy dipping sauce, often accompanied by a fresh vegetable salad and steamed rice or fries.

Here’s a simple recipe for Chicken Lok Lak:

For the Chicken Marinade:

  • 500 grams of chicken breast, cut into bite-sized pieces
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon fish sauce
  • 1 tablespoon sugar
  • 1 teaspoon black pepper
  • 1 tablespoon lime juice
  • 2 cloves garlic, minced

For the Dipping Sauce:

  • 2 tablespoons lime juice
  • 1 tablespoon black pepper
  • 1 tablespoon salt

For the Salad:

  • 1 cucumber, thinly sliced
  • 1 tomato, thinly sliced
  • 1 small red onion, thinly sliced
  • Lettuce leaves


Marinate the Chicken

  1. Prepare the Marinade: In a bowl, mix the soy sauce, oyster sauce, fish sauce, sugar, black pepper, lime juice, and minced garlic.
  2. Marinate the Chicken: Add the chicken pieces to the marinade, ensuring they are well-coated. Let it marinate for at least 30 minutes to an hour for the best flavor.

Cook the Chicken

  1. Stir-fry the Chicken: Heat a little oil in a large pan or wok over medium-high heat. Add the marinated chicken pieces and stir-fry until they are cooked through and slightly caramelized, about 5-7 minutes.

Prepare the Dipping Sauce

  1. Make the Sauce: In a small bowl, mix the lime juice, black pepper, and salt. This sauce adds a zesty kick to the dish.

Assemble the Dish

  1. Prepare the Salad: Arrange the cucumber, tomato, red onion, and lettuce on a serving plate.
  2. Serve: Place the cooked chicken on the plate next to the salad. Serve with the dipping sauce on the side and steamed rice or fries.
